Sheet Pan Lemon Herb Roasted Salmon and Asparagus

Flaky salmon roasted with bright lemon and fragrant herbs alongside tender asparagus for a simple and healthy meal.

  • 1lemon
  • 15gdill
  • 15gparsley
  • 10ggarlic
  • 300gpotatoes

Instructions

    Preheat oven to 200°C.

    Wash and trim asparagus. Cube potatoes into bite-sized pieces.

    Toss potatoes with a little oil, salt, and pepper, and spread on a baking sheet. Roast for 15 minutes.

    While potatoes roast, chop dill and parsley, mince garlic, and slice lemon.

    Add asparagus to the baking sheet with the potatoes. Place salmon fillets on the sheet, top with lemon slices, herbs, garlic, and a drizzle of olive oil.

    Roast for another 12-15 minutes, or until salmon is cooked through and flakes easily, and asparagus is tender-crisp.
