Peruvian Tacu Tacu with Seared Scallops

  • 400grice (boiled)

  • 200gbeans (canary)

Instructions

    Mash half of the canary beans and mix with the cooked rice.

    Form the mixture into flat patties.

    Sear patties in a pan with a little oil until a crispy crust forms on both sides.

    Season scallops and sear for 2 minutes per side in a hot pan.

    Dice red onion and mix with lime juice to create a quick salsa.

    Serve the patty topped with scallops and the onion salsa.

    Add fresh avocado slices on the side.
