Dice potatoes into 1cm cubes.
Bring vegetable broth to a boil.
Add potatoes and simmer for 15 minutes.
Add corn kernels and cook for another 5 minutes.
Stir in heavy cream and heat through for 2 minutes.
Use a blender to slightly puree half the soup to add texture.
