  • 300gpotatoes
  • 300gpumpkin
  • 1onion

  • 400mlcoconut milk

Instructions

    Chop onions, potatoes, and pumpkin into small cubes.

    Sauté onions in a pot until soft.

    Add potatoes and pumpkin, cook for 5min.

    Pour in coconut milk and simmer at 100°C for 20min until vegetables are tender.

    Stir in fresh spinach and wilt for 3min.

  6. 6

    Serve warm as a stew.
